Meatloaf

I've always been able to cook a good meatloaf. I use this recipe now. The meatloaf mix is great! I do add onions and green pepper to mine. I also cook it in muffin tins. It cuts down on the time and they are great to freeze.

Paula Deen quiche

I made this for breakfast this morning. I used deli ham and cheddar cheese. It was really good. I did use about 3/4 cup extra of the hashbrowns, based on reader comments. It also took longer to brown the crust. If my broiler worked, I would have browned it for a few minutes that way after baking. I used 1/2 cup of skim milk and 1/2 cup evaporated milk. I used regular onions. I think I want to do one with bacon next time!


Ingredients

3 cups, shredded frozen hash browns, thawed and drained
4 tablespoons (1/2 stick) butter, melted
3 large eggs, beaten
1 cup half-and-half
3/4 cup diced cooked ham
1/2 cup diced green onions
1 cup shredded Cheddar
Salt and freshly ground black pepper
Directions
Preheat oven to 450 degrees F.

Gently press the drained hash browns between paper towels to dry them as best as possible. In a 9-inch pie plate, toss the hash browns with the melted butter into the plate. Press them into the bottom and up the sides to form a crust. Bake for 20 to 25 minutes until golden brown and starting to crisp.

Meanwhile, in a large mixing bowl, combine the remaining ingredients. When the hash brown crust is ready pour the egg mixture over it and return to the oven.

Lower the oven temperature to 350 degrees F and bake for about 30 minutes until the quiche is light golden brown on top and puffed.

Chocolate Pound Cake With Fudge Glaze

Cake:
3 sticks margarine or butter 3 tsp vanilla
3 C sugar 1/2 C Cocoa
5 Eggs 1/2 tsp Baking Powder
3C All Purpose Flour 1 C Milk

Preheat oven to 325. Grease and flour bundt pan, set aside. Cream butter in large mixing bowl. Add sugar, beat until light and fluffy. Add eggs, one at a time, beating well after each addition. In separate bowl, stir together flour, cocoa, and baking powder. Measure milk and stir vanilla into it. Add milk and dry ingredients alternately, mixing after each addition. Pour into pan and bake for one hour and twenty minutes. Let cool for ten minutes before removing from pan and allowing to cool completely before adding glaze.

Glaze:

1 1/2 C Sugar 7T Milk
1/4 tsp salt 2 T Shortening
1 tsp vanilla 2 T Margarine
1/2 C Cocoa

Combine sugar, cocoa, milk, shortening, margarine, and salt in heavy saucepan. Bring to a rolling , stirring constantly. Once it reaches a boil, allow to boil without stirring for two minutes, no more. Remove from heat and add vanilla. Stirr until cooled just slightly. Spoon over cooled cake.

Super Doubles Again

I got 4 boxes of Special K - on sale 4 for 10.00. With this purchase, I automatically got 5.00 off at HT. I had 2 coupons for 1.00 off of 2 boxes that were doubled. Yeah, I got four boxes of Special K for 1.00!!!
I got free rice, baby soap, and greek yogurt. I spent about .17 for ketchup. My total was $27.40 I saved 63.35 with my coupons and 27.63 with my VIC card!

Using things to take a meal...

I signed up to take a meal to Jerry since he had sugery. I made 3 lasagnas yesterday. I've never used the big cans of tomatoes until yesterday. I picked up a big can of tomatoes at Sams when I was home in anticipation of this meal. I sent a big bowl of lasagna along with 3 freezer meals for him. We had lasagna dinner last night and lunch for today. I was also able to freeze about 8 lunch size portions for me and Mike. Jerry is allergic to chocolate, so that knocked out almost all of my dessert recipes. I found a TS almond pound cake in my pantry that I made. I also found and made some whole wheat TS beer bread. Finally, I bought some blue jello this past summer for a recipe. I have forgotten what it was, so I made 2 boxes of blue jello. I sent half for Jerry and Will ate all of what was left :) I still have 3 boxes of the no bake barilla lasagna noodles - the best and the easiest! I only have a few cans of tomato paste left, but is should get me through the month with no problems. I only have one box of TS whole wheat beer bread left.

HT super doubles

I went to HT tonight for super doubles. I was not well prepared. I didnt have time to really organize my coupons. Nevertheless, I spent 38.96 (10 of that was on soda packs) and saved 69.80
Not my best trip, but Im happy with it. I got free Puffs, rice, Johnson baby bar, Dawn direct foam, and Spot Shot.
I was also able to use coupons and a 5.00 HT deal to get 2 boxes of Special K and 2 packs of Protein Water. I also got 6 boxes of Pasta Roni for super cheap.

Kashi Waffles

I got these a few months ago when HT was having Super Doubles. I believe I paid less than .50 a box for them and got 3 boxes. The boys and I had strawberry waffles last night for supper. This morning we are having blueberry. I've got 1 box of Strawberry left. Having snow days is a great way to use up my stockpile of items!

HT is having super doubles this week. Im hoping Im able to get to HT a few times to get some free/almost free items.

Does anyone have one that they would share with me? I'd prefer a crockpot version. This will be my first time making it and serving it. Ral loves tomatoes, so Im hoping he will like tomato soup!

A few other ideas

I've been looking for a good pizza crust recipe. This one sounds good and easy! The revies of the calzones are great!

Garlic Dressing

Garlic Dressing:
1 clove garlic
1/2 t salt
2 T white vinegar
4 T light Olive Oil

Crush garlic with salt. Put in jar with oil and vinegar. Shake. Very strong... just a little goes a long way.

**This recipe came from a friend of a friend. Im wanting to try it this month. I'll report back how it is!

January Menu Plan

I LOVE to cook. When I was young I thought about being a chef. Today one of my favorite things to do is watch Food Network, the next Food Network Star, and Top Chef. Im a chef to the Combs' boys!

Here is my plan for the month. The ingredients out to the side are just my personal notes of things I need at the grocery store. I have just listed main meals on here, not side items. Maybe I'll get "that" organized some day. I spent the weekend cleaning out both of my freezers and one cabinet. I want to use up ingredients this month with what we have. I will shop good sales and of course have a plan for HT super doubles this week. If I don't need it now, however, I want to only buy those things that are very, very cheap. Im hoping to post my savings each week when I shop as well. Im going to take inventory of my freezers and keep that information posted/updated as well.

Taco Soup

Pioneer woman lasagna I'm making 2 or 3 lasagnas when I do this. We are taking meals to a friend. I'll also send some individual containers of it for him to freeze. We will eat it for a day or 2, including lunches. I'll freeze the rest in individual containers. I've done this before with PW lasagna and it tastes great!
